- 10 ounces all-purpose flour
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 3⁄4 ounces light brown sugar
- 3 1⁄2 ounces white sugar
- 1 cup buttermilk
- 1⁄4 cup unsalted butter (melted)
- 1⁄4 cup apricot preserves
directions
- Preheat oven to 400 degrees F (205 degrees C).
- Stir together the flour, baking powder, salt and sugars in a large bowl. Make a well in the center.
- In a small bowl beat egg. Stir in buttermilk and melted butter.
- Add milk mixture to flour mixture. Mix gently with a rubber spatula until moistened, but do not beat. The batter will be lumpy.
- Spoon one tablespoon of batter into paper lined muffin pan cups. Add one teaspoon of jam to each cup. Fill cups with remaining batter.
- Bake for 20 minutes, or until golden.
