Blintz Souffle'

"This recipe was given to me by a friend. It is one of the dishes I serve when I make the Break-fast meal. Servings are approximate. With all the food that is served at this meal, it could easily serve 24, I'm sure."

  • 2 (13 ounce) packages of frozen blintzes (6 blintzes per pkg)
  • 4 eggs
  • 18 cup butter
  • 14 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 12 cups sour cream
  • 1 -2 tablespoon orange juice

directions

  • Melt butter in 9x13 casserole.
  • Put the 12 blintzes in the buttered casserole to cover bottom.
  • Mix all ingredients together and pour over the blintzes.
  • Bake at 350* for 45 minutes to 1 hour.

Questions & Replies

  1. If I use Golden sweet blintzes for this recipe will 1/4 cup sugar be enough? They're not as sweet as fruit blintzes, but a lot sweeter than regular blintzes. Thanks for your help!
     
  2. Did anybody ever use kosher salt?

  4. Will non-dairy sour cream work? I have lactose-free friends.

  1. I have another recipe for this that calls for 1 1/4 cup sugar. I always thought it was too sweet, so decided to try this, using a mixture of apple, blueberry and cheese blintzes. I ate a blueberry blintz and loved it. My husband ate a cheese and said it needed more sweetness which solved the sugar mystery. The cheese blintzes don't really have any sweetness in them so need a lot from the soufflé. The fruit blintzes don't need a lot so this recipe is perfect for them. Something to keep in mind when determining which blintzes to use.
