ingredients
- 1 large loaf Italian bread (soft) or 1 large French bread
- 12 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1⁄4 cup grated parmesan cheese
- 2 tablespoons chopped Italian parsley
directions
- Preheat the oven to 450°F.
- Cut the loaf in half lengthwise with a large serrated knife. Place the halves cut-side-up on a large rimmed baking sheet.
- Melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 2 minutes. Remove the pan from the heat and let stand 5 minutes for the butter and garlic flavors to marry.
- Use a pastry brush to generously apply the garlic butter to the cut sides of the bread. Stir the mixture with the brush as you go, and use a scooping motion to pick up little pieces of the minced garlic in the bristles.
- Bake the bread for 10-15 minutes, or until golden brown around the edges. Remove the loaves from the oven and immediately sprinkle each half with 2 tablespoons of the grated parmesan. The hot butter will melt the cheese slightly.
- Sprinkle with each loaf with 1 tablespoon of the chopped parsley. Cut each half into pieces and serve warm.
