  • Preheat oven to 350°F.
  • Spray a 9 x 13-inch pan with non-stick cooking spray (Pam) or grease pan and then line pan with aluminum foil. Spray Pam over foil or grease foil.
  • Sift flour, salt and baking powder in a medium bowl.
  • Add all remaining ingredients (except for the powdered sugar) and mix well with a wooden spoon.
  • Spoon mixture into pan, spreading evenly.
  • Bake for 20-30 minutes or until golden brown.
  • Invert onto work surface and carefully remove foil and slice into bars while still warm.
  • Transfer bars to a rack to cool and sprinkle with powdered sugar (if desired).

  1. Very easy to prepare and very moreish with a lovely, chewy texture. I didn't have enough dates on hand, so made up the difference with raisins. Will make again!
     
  2. I made these to include in gift packages for Christmas. They are a very good chewy date bar. I made them just like the recipe said, but didn't dust with powdered sugar. We really enjoyed them with a cup of coffee. Thank you Ellie, these will be a regular at my house.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
