Texas Toast Breakfast Casserole

"This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us."

ingredients

  • 1 (8 ounce) package pork sausage (can use hot, also sub ham or bacon)
  • 12 teaspoon salt
  • 6 eggs, beaten
  • 1 - 1 12 cup half-and-half
  • 6 -8 slices Texas toast thick bread
  • 8 -12 ounces shredded cheddar cheese

directions

  • Brown sausage and drain.
  • Place Texas toast in greased 9x12 casserole dish.
  • In a medium bowl mix eggs with salt and half and half.
  • Pour mixture evenly over bread.
  • Top with browned sausage and shredded cheese.
  • Cover and refrigerate overnight.
  • Take out of refrigerator in the morning while you are preheating your oven to 350 F bake for 45 minutes or until browning on the top.
  • note: cooking time does not include overnight refrigeration.

  1. I added some diced tomatoes, onions and corn to my eggs and I topped the cheese with a cracker crust (melt 4tbsp butter and crush crackers in). The texture of the soft bread and crust was really good. This casserole is so filling and yummy!
     
  2. Had a couple of overnight guests & the 4 of us easily consumed over 3/4 of this very nice tasting casserole without any problem at all! I used a mild Italian sausage, a not-so-mild cheddar & homemade nutty whole wheat breat in this very easy, no-fuss breakfast! Not the healthiest of meals, but it certainly was enjoyable!
