  • Heat oil in large soup pot.
  • add ham hock and sear on all sides, for about 4 minutes.
  • Add onion, celery, red pepper, and garlic, cook for 4 minutes.
  • add black eyed peas, chicken stock, bay leaves, thyme and salt and pepper.
  • Bring to a boil, reduce heat and simmer for 40 mins, or until the peas are creamy and tender, stirring occasionally, adding water and or stock as needed.
  • Stir bean mixture into cooked white rice and adjust seasonings to taste.
  • garnish with green onion.
