Meatless Meatloaf

  • Preheat oven to 350°F.
  • Roast the nuts for 5-7 minutes and then chop coarsely.
  • Turn up the oven to 375°F.
  • Cook the onion in the butter until soft.
  • Season with salt and pepper, add the garlic, chopped mushrooms, and herbs.
  • Cook until the liquid released by the mushrooms is reduced.
  • In a bowl, combine the onion/mushroom mix with the cooked rice, nuts, eggs, cottage cheese and grated cheese.
  • Season to taste.
  • Butter a loaf pan and fill it with the loaf mixture.
  • Bake the loaf about 1 to 1/4 hours until the top is golden and rounded.
  • Let the loaf sit out of the oven for 10 minutes before turning out onto a serving plate.
  • Serve with a mushroom or herb bechamel sauce.

  1. This is a slightly modified version of "Cheese and Nut Loaf" from "The Greens Cook Book" The original recipe calls for dried mushrooms (soaked) and fresh mushrooms. We have made this loaf several times and it is fantastic! If you like mushrooms, chop some soaked shiitakes or porcinis (1 oz dry) and add them. If you ever get a chance to eat at "Greens" restaurant in San Francisco, do it!!
     
  2. I enjoyed this very much. I finely blended all of the ingredients, so that they all mixed evenly... but other than that followed it to a 'T'. Thanks for a delicious, healthy spin on Meatloaf!
     
  3. I have been looking for a meatless loaf recipe and I was hopeful because of all the positive reviews. Unfortunately, I did not like this. I thought the rice was too much of an influence on the taste. It did not taste bad but I will not make this again. Alas, my search continues...

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
