Mini Skillet Meatloaves

- 1⁄3 cup breadcrumbs
- 1⁄3 cup milk
- 1⁄3 cup chopped fresh parsley
- 1 large egg
- 3 tablespoons Worcestershire sauce
- 1 small onion, finely minced
- 1 teaspoon chili powder
- 2 garlic cloves, minced
- 1 1⁄2 lbs meatloaf mixture (ground beef, pork and or or veal)
- kosher salt & freshly ground black pepper
- 1 tablespoon vegetable oil
- 1⁄2 cup ketchup
- 2 tablespoons packed light brown sugar
- 1 tablespoon apple cider vinegar
directions
- Mix the breadcrubms, milk, parsley, egg, Worcestershire sauce, onion,chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 4" oval loaves.
- Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
- Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
- Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook ovr high heat, stirring, until thick, 3 to 5 minutes. Serve meatloaves with the hot glaze.

A good meatloaf recipe with nice flavour...moist and tasty. Mine started to break up a little in the pan, but the mix was a little on the wet side to begin with. I still had plenty of cooking liquor left at the end of cooking time, and rather than waste all of that flavour from the meatloaf, I added the glaze ingredients to it, and reduced it down. Although it probably wasn't as thick and sticky as it should have been, it tasted great.<br/>The entire family enjoyed this ( including a six and four year old!) so can't be bad!!<br/>Made for AUS/NZ Recipe Swap #51.

This is the perfect meatloaf recipe Crafty Lady. We really enjoyed these special little treats. The flavorful was amazing, the mini loafs were moist, tender, juicy and oh so flavorful. I really loved the ease of this dish, it was on the table in no time at all. A great comfort food. Served them with homemade oven chips and vegetables for dinner, and I enjoyed the one that was leftover the next day in a sandwich. Thank you so much for sharing another winner. Into my keeper box this goes.

<p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. I currently live in the country with two dogs (a 12 pound poodle mix named Suki and a new member to the family, a 7-month old(?) 7.5 pound terrier mix named Angel ). I got Angel from the dog pound a week after I lost my beloved Maxx. Suki and I both needed a new companion to help us cope with our loss. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts. I was born in Tokyo,Japan. My father was in the Air Force and my moher was Japanese. I love to cook (and eat) a variety of foods from many different nations.
