8 Potato/Salmon pancakes

- Put the onion, potato, salmon, egg, flour, salt and pepper in a food processor.
- Pulse until finely chopped and blended into a batter.
- Heat olive oil in a nonstick frypan on medium heat.
- Using a ¼ cup measure fry pour the batter in the pan and fry the pancakes until they are nicely browned on both sides.
- The recipe makes 8 pancakes.
- Serve with sour cream or plain yogurt.
- Leftover pancakes are great reheated for breakfast.
