  • Put the onion, potato, salmon, egg, flour, salt and pepper in a food processor.
  • Pulse until finely chopped and blended into a batter.
  • Heat olive oil in a nonstick frypan on medium heat.
  • Using a ¼ cup measure fry pour the batter in the pan and fry the pancakes until they are nicely browned on both sides.
  • The recipe makes 8 pancakes.
  • Serve with sour cream or plain yogurt.
  • Leftover pancakes are great reheated for breakfast.
