Quick Cinnamon Coffee Cake

"This was in a church cookbook. I usually dress it up with raisins and shredded apple, but the recipe is good as it is. It is a great recipe to put into the oven while cooking something else."

  • Preheat oven to 350°F.
  • Grease round cake pan.
  • Combine sugar and cinnamon; set aside.
  • Measure all remaining dry ingredients into a bowl and mix well.
  • Beat together butter, milk and egg; pour over dry ingredients.
  • Stir until dry ingredients are moistened - don't beat!
  • Pour batter into a pan and sprinkle top with cinnamon sugar mixture.
  • Bake for 20 minutes and serve warm.

  1. Do you combine the 3 Tbsp of sugar with the cinnamon and the 1/2 Cup sugar in the cake? The directions just say combine sugar and cinnamon to set aside. I’m probably just an idiot but wasn’t sure. Thanks

  1. I'm gluten free and have a gluten free all purpose flour blend. I've used it on a few "regular" recipes as it says it works for and haven't been super pleased. With this recipe, however, it was perfect! I warmed the butter and milk only slightly and then beat in the egg. The batter isn't a lot but it makes a nice fluffy and delicious basic coffee cake. I'll make this over and over!
     
  2. Great basic recipe to have. Thank you for posting it. I needed a cake quickly and when I read beat the butter with sugars, etc I thought, ugh, mixer. So I thought I'm going to try just melting the butter in the micro and I added the sugars, mixed it and did the measuring for the other ingredients then continued in the directions. Came out fine. My only other thought was although the cake tastes great as is, it would be great with additions. The author mentions raisins and apples, I think blueberries might be yummy or at the very least, I might double the topping recipe and just pour in half the batter, sprinkle the topping, then rest of batter, then topping. Glad I made it.
     
  3. I woke up early on this sunny Sunday morning and was motivated to bake! This is an easy recipe to put together pre-coffee, ingredients are standard pantry items. Light, fluffy, just sweet enough. Husband and son devoured!
     
  4. Perfect little cake to make quickly. I used rice milk instead of dairy milk and margarine instead of butter. This cake is fluffy, moist and light. I added dried cranberries while folding dry ingredients to wet. It is very important not to over mix the batter.
     
  5. Needing something quick and easy to bring to work this morning, I chose to make this coffee cake. I ended up making 2 separate cakes and it was a good thing...they are DELICIOUS! I'll definitely put this recipe in the file! It's so easy, takes a short amount of time to bake, and is scrumptious.

Tweaks

  1. I added frozen blueberries to the flour mixture before I added the egg mixture. I also took a knife and cut the cinnamon/sugar mixture to marble it through the cake. The finished product was divine! Very light and tasty!
